Jaggery tesco
The best beans are picked very early in the morning, washed and prepared in three ways -either left whole, left with just the top and bottom chopped or cut into tiny pieces. This was being done under strict hygienic conditions. They even had a British Airways Cargo container at the factory where the vegetable boxes would be labelled — showing which farm the crop came from and the date picked etc. These beans were flown out the same evening from Kenya and they got to UK early morning for the market wholesalers to pick up. It was an amazing visit and since that day I have always looked with wonder at the beans and other vegetables from abroad and appreciate the fact that the best crops are exported to UK where people like me can enjoy cooking them. Dice the potatoes into cubes and the beans into very small pieces and soak them in cold water. Add the mustard seeds. They should start popping — if not, stir them with a wooden spoon and wait for them to pop. Add the salt, turmeric, chilly powder, cumin powder, garlic small pieces or crushed sugar or jaggery and stir well. Add only half a cup of water and cook for a further 5 minutes in the microwave. Check to see if the potatoes have softened. If not give it another 2 minutes. Once the potatoes feel soft, add the tomatoes and lemon juice and let it cook for 5 minutes. The whole cooking process for me was 10 minutes in the microwave as the beans were so fresh and tender. This bean curry can also be made in the Instant Pot.

Sugar cane bundles are first pulped to a juice. All photos: Kalpana Sunder. The smell, on the other hand, was divine, the stuff lazy childhood dreams are made of. A closer look revealed entire families of farmers hauling thick bundles of sugar cane that were being pulped to a juice, and then boiled, cleaned and stirred with giant ladles in huge cauldrons over wood fires to form a thick, fudgy paste. Jaggery has been used in many Indian and some Asian and African households for centuries and has been used as a natural sweetener by Ayurveda practitioners for more than 3, years. Jaggery was rediscovered in the late s in south India by the Portuguese colonisers, and it subsequently spread to other parts of South East Asia, including Myanmar and Vietnam, as well as Africa. Preferences changed after during British colonial rule in India, which not only destroyed the jaggery industry, but also promoted refined white sugar. However, the ingredient has found favour in recent decades as consumers became ever more health conscious. At present, India produces more than 70 per cent of the world's jaggery, and more than three million people earn their livelihood from this cottage industry. With its taste of rich caramel and spicy molasses, jaggery, or unrefined cane sugar, can be likened to Latin American panela and Portuguese muscovado.
