District: Downtown Omaha. There are two distinct portions of the menu at Via Farina : pizza and pasta. How is one supposed to choose between an authentic, wood-fired pizza or fresh, handmade pasta with wonderfully-constructed sauces? The restaurant, though a bit small, has a very modern feel, and diners are granted full view of the open kitchen and the pivotal oven. The dough, a combination of natural Italian flour and wild yeast, takes at least three days to create before its trip into the fiery belly of the oven. All the work shows in the final product—the inner crust is a bit loose, but it folds perfectly. The Pepperoni Pizza is an excellent example of this. The meat adds sharp bites of salt and fat, which are accented by the creamy pops of fresh mozzarella. The sweetness of the San Marzano tomatoes complements the salt and fat without interrupting. The Paraggi Pizza creme fraiche, tomato, Italian sausage, wood-roasted peppers, oregano cheese and Salsiccia Pizza sausage, fennel, arugula, sun-dried tomatoes are both excellent as well, and the veggies especially add a nice pop.

How much of the menu is available gluten-free?

Was happily surprised when I stumbled upon this place and they has gf pizza and pasta! The pizza with califlower crust was delish! I did go a separate time and had some of the fried califlower appetizer because they said there was no gluten in the recipe but could have been fried in the same fryer as other foods. Huge disappointment - When we walked in we asked about GF. After being seated, the waiter, after asking the chef, said neither of them could be confident that it would actually be GF. Deciding to stay bc everyone was starving, the choices became minimal at best when we asked. Starving, dissatisfied, and probably contaminated and definitely broke.

Most authentic Neapolitan pizza in Omaha the Margehrita - however they are a bit inconsistent with the pizza baking, sometimes it will be burnt which is annoying considering the price. The food menu is just the right size not to overwhelm. The pasta and pizza are different from your everyday and are fantastic! December First time here and it was great our waitress was super busy but was very attentive. Food was awesome my friend was super excited to see the burrata and we had a parma rosa pizza it was all amazing and definitely will be More Reviews
