Around this time last year, I reviewed Such and Such's sister restaurant, Pilot, which subsequently became The Canberra Times' top-scoring restaurant of the year. It was also awarded two chef's hats. Bravo to them.

There's a nod to the Levant in the slick of toum on crumpet-like sourdough flatbread; a gesture to Neapolitan acqua pazza in a brothy tumble of salmon, mussels, semi-dried tomatoes and al dente beans. Unthinkably juicy roast duck on the crown, meanwhile, owes as much to China and France as it does to Kylie Kwong, finished with blood plums and a resonant fish-sauce caramel. The concept, look and feel may well be loose-knit, but the vision is clear and the focus just as tight. Pilot's more casual, colourful sequel has come in hot and, much like its older sibling, looks poised to become one of the Territory's quintessential dining addresses. Photo: Lucy Ridge. The team behind award-winning Pilot has opened the doors on their second restaurant, Such and Such, a more casual — but still exceptional — space in the city. Owners Ross McQuinn, Malcolm Hanslow and Dash Rumble have established Pilot as a fine-dining destination with people booking well ahead of time for a table at the Ainslie restaurant. The snacks at Such and Such are great, whether they are the start of a meal or just accompanying a pre-theatre drink. Proximity to the theatre is another bonus. Consult the excellent wine list, or put your trust in the staff to make a well-informed recommendation. Executive chef Mal and Such and Such head chef Nick Peterson have created a neat little menu with the same attention to detail that makes Pilot so exceptional. Standout dishes include the impossibly crispy fried zucchini flowers with the perfectly balanced acidic counterpart of salsa agresto and sardines, an excellent starting snack alongside plump oysters, tongue skewers with verde mayo and a bowl of crunchy spiced school prawns.
