Plant callaloo
One of our favorite greens with onions and garlic, plant callaloo, Plant callaloo thrives in containers and raised beds as well as garden soil, prolific even in drought and low-fertility conditions. A dish as well as a plant, Callaloo as a dish hails from West Africa while Callaloo, in the amaranth family, co-adapted with humxns in both Africa and the Americas, dearly beloved in the Caribbean. These leaves are deep emerald green, so smooth and so long, on upright plants that resist going to seed too quick.
Unlike other gardeners and green-fingered enthusiasts who trace the roots of their interest back to growing things with grandparents, the organic food grower and writer explains she was more interested in being inside with a book as a kid than outdoors with plants. Fast forward to leaving the UK and her time in New York working as a documentary producer and things changed. She happened upon a sign inviting passers-by to explore a rooftop growing space. Incredulous and intrigued, she did. Other gardens had never captured her attention the way Brooklyn Grange — a collection of rooftop farms across the city — did. We rely on these processes in order to, not just thrive, but be alive.
Plant callaloo
Callaloo is a delicious Caribbean leaf vegetable, traditionally known as amaranth. It is similar to spinach and versatile in the kitchen as it can be used in stews, curries or salads. Plants grow vigorously throughout the summer and you should keep picking the leaves in order to make the most of the crop. In autumn, Callaloo produces a large and beautiful seed frond! Grown by: East New York Farms! Smooth, bright, tender leaves that can be steamed lightly or even eaten raw. Young stems are tender enough to steam, and mature stems have a light, fluffy pith that tastes and feels similar to summer squash. Callaloo, the dish, originates in West Africa. The plant, a type of amaranth grown for its greens, was domesticated in Africa and the Americas, and it is cherished in many parts of the Caribbean. Not only is it rich in flavor and nutrition, it is an extremely resilient, self-sufficient, and prolific crop, making it an ideal superfood.

This is a native plant in Latin America and the Caribbean but it can be found anywhere across the globe. The important parts of this plant include the leaves, the seeds, and the stems.
