A couple of weekends ago I was invited along to one of my favourite eateries, Miller and Carter in Talke, to enjoy a Saturday evening of good food, good drinks and good company. T-Bone is recommended served to be cooked medium rare which is how I usually take my steak, although when it came my steak was cooked a little more on the medium scale but it was mouth wateringly juicy all the same. My steak topper of a lobster tail was a little messy — I admitted cutlery defeat after a a couple of seconds of trying to look ladylike and got stuck in with my hands getting and striking lobster off my food bucket list along with scallops from the starter! Ask me about my favourite dessert and lemon meringue will be top of the list everytime. The berry compote complimented the roulade perfectly bringing an extra dimension of tang to the dish whilst not being overpowering. Unsurprisingly the plate was practically licked clean. The tables are always taken and the booths are always bursting with happy steak eaters rubbing their over filled bellies and drinking glasses of wine or sampling a classic cocktail or another but this is just a sign of the quality of the food and the service — which is always impeccable. By Antony Thrower For Mailonline. The replacement was spotted in a routine check by Swansea Council's Trading Standards department at a branch of the popular chain. An investigator discovered they used a supplement known as Lobster Sensations which has 35 per cent lobster, 34 per cent combination of white fish, and the remainder made up of fillers. It was found in popular dishes such as prawn and lobster cocktail starter, lobster thermidor and grilled half lobster. Swansea Magistrates' Court was told the menu failed to spell out the fish mixture was only a third lobster when it was served to customers. Several lobster dishes on the Swansea restaurant's menu contained supplement Lobster Sensations which contained white fish and other fillers. Lee Reynolds, prosecuting, said the trading standards officer was shown a delivery note for the lobster which revealed it to be Lobster Sensations.
The payments are intended as a way for waiting staff to share tips with chefs and other back of house workers. But the Unite union and waiting staff who spoke to the Guardian claim the system can sometimes lead to earnings from tips and service charges being less than the amount owed to fellow workers. In one case, a worker claimed the amount of cash they had been asked to hand over meant their pay fell below minimum wage on a shift. The Guardian has seen evidence that votes gave staff in several restaurants only limited options for how to split card tips — all or most of which were a percentage of sales. Waiting staff claim that paying out a percentage of sales means they will in some cases lose hundreds of pounds a month in income at a time that their household bills are on the rise. One worker said she was paid less than the minimum wage on a shift because she was asked for cash to meet the payment to other staff not covered by her tips. In other restaurants, the Guardian has seen evidence that the amount owed to other staff was noted down to be paid on a future shift because it could not be covered by tips on the night. Both those factors mean that the level of tips and service charge earned by waiting staff is highly unreliable and not directly linked to sales.
