This soup reminds me of the Lebanese shawrabat adas Yellow Lentil Soup. It is very similar in taste and texture but, with a different flavor profile from the mint, tomato paste and fresh lemon juice.
I always order this soup when I am at a Turkish restaurant, it is my altime favourite. I made this recipe today and it came out great, just like the restaurant. Loved it. Thanks for posting. I love this soup!

The lentil soup is served with some fresh lemons on the side which, really takes the soup to the next level. It is also quite filling!

Instructions: 1. In a large pot, heat the olive oil and melt the butter over medium heat. Stir in the minced garlic and cook for another minute. Add the chopped tomatoes to the pot along with salt, and pepper. Cook for about 10 minutes until the tomatoes soften. Pour in the vegetable broth and bring the mixture to a gentle simmer. Let it cook for an additional minutes. Use an immersion blender to puree the mixture until smooth.
