Ordering from Australia? We are obsessed with all things Mali Bakes, what was the inspiration behind starting your own cake business? The inspiration from the business coincided with a few things, all of which were brought together by the pandemic. My housemates at the time were all pursuing different creative outlets as well; sculpture, jewellery making, and photography - to name a few - and I found myself wanting to express myself in my own way, which was always through colour and aesthetics. So, I began making cookies which eventually turned into making cookies and cakes. Where do you find the inspiration for the flavours and designs of your cakes? They have such a unique, retro feel to them. The flavours are kind of an extension of that kaleidoscope idea - I like interesting flavours; flavours that have a background, that have a story that goes with them, a friendly face and come from all over the place. This aspect of Mali Bakes is really important to me. I buy locally as much as I can and really spend time with each individual flavour trying to find its perfect match. Weddings are my favourite occasion to bake for. They give me the chance to explore larger-scale, multi-tiered cakes. That changes all the time!

For the most part of my chef career, I mali bakes in hot kitchens. If you had to pick, what would you say is the best part of what you do?

Mali Bakes is a retro inspired bespoke cake studio. Our ethos is all about fun designs and flavours. We want to create cakes that are truly beautiful, delicious, and unique inside and out. Our studio is also open every Saturday for sliced cakes, so pop in and say hi! Mali is a Thai word meaning Jasmine and is also a very traditional name for girls.

Patchanida Chimkire caused a sensation on Instagram during the lockdown when her Mali Bakes account became a bright spot in an otherwise dark time. She started baking and delivering cookies around Melbourne, becoming known for her colourful vintage-style cakes. Chimkire then went from a one-person operation to employing two soon to be three pastry chefs with a commercial kitchen and shopfront in Thornbury offering cakes by the slice every Saturday. But after three years of piping buttercream frills and topping cakes with maraschino cherries, she was ready for a new creative challenge. There are no elaborately decorated cakes at the neighbourhood window. Instead, Chimkire is using the shop as an opportunity to explore exciting flavour combinations and seasonal ingredients.

Mali Bakes cakes are cheerfully retro, vividly coloured and intriguingly flavoured. Chimkire was working as a pastry chef when the pandemic hit. But with the hospitality industry thrust into hibernation, she decided to look for a silver or candy-coloured lining in all that newfound free time. It popped off. A ton of time and effort went into developing the cake aesthetic.

When pastry chef Patti Chimkire lost most of her work in due to the Melbourne lockdowns, she decided to make the most of her free time and explore a new source of income baking cookies and cakes from her small share house — and boy, are we glad she did!
