A great job involving a road trip down the coast of Australia fell through last minute this week so instead of sitting at home disappointed I decided to embark on the first leg I had planned out anyway. This post only skims the surface. The first stop, excluding a perverse intermission at a Gerringong lookout, is to Berry to visit the relentlessly instagrammed Famous Berry Doughnut Van. Entering venues with zero expectations is my default setting yet somehow this van in shining armour was everything I had hoped for and more. The warm pillowy fried-to-order donuts laced with cinnamon sugar were the epitome of what I loved about growing up in the western suburbs of Sydney, the alluring scent of Donut King in a local Westfield is one of my earliest and fondest memories — except these were tremendously better with no Quake Shake in sight. The humble cinnamon donut has finally been elevated to what it should be. Mangos, cherries and plums being were sold by the box across the short fence next door. Order a plate and take a seat by the Crookhaven River with a view of the serene oyster farms. The area is incredible, the bone dry ruins of shellfish of the past lying in shackling buckets amongst faded machinery and creaky palettes.

If anything, the no-frills dining space on the riverbank is evidence that Wild and wife Robyn concentrate all their efforts on growing top-notch oysters. If you prefer takeaway you can buy your oysters unopened. Otherwise, order them freshly shucked by the dozen. The small, creamy Sydney rock oysters are best enjoyed natural with a touch of ground pepper and a tiny squeeze of lemon. Wild recommends a good dash of Tabasco with the bigger, slightly chewier Pacific oysters. Both are usually salty enough, thanks to the salt water that trickles in when opened fresh. Occasionally on the weekend there will be oysters Kilpatrick, too.

The family has several leases in the Shoalhaven River where they farm native Sydney rock oysters and introduced Pacific oysters. When Pacifics were first introduced into Australia, the fast-growing variety quickly took hold, threatening the local species. But growers can now purchase spat baby oysters that cannot reproduce from a grower in Tasmania, making it a safer alternative for the environment. In fact, oysters are an environmentally sound choice: the filter feeders require no external inputs and can positively impact the water quality. The stringent quality testing also means there is a real focus on the health of estuaries and river systems overall. Enjoy the oysters by the water. Despite his speed, he recommends that beginners take it slow and steady. In addition to purchasing oysters to open at home, customers can also buy freshly opened plates with various toppings to enjoy next to the water.
