I decided the perfect way to celebrate the new decade was with a recipe that everyone has been requesting for a very long time — prosecco cupcakes! It seems the ideal time to post it and it is delicious too. I thought cupcakes would be cute — and I just love how they turned out! Honestly, I overbought, and had some left as expected… but wow. You can swap it to a rose prosecco for example, but again, the flavour might not be so prominent to be able to tell which one it is.

Please see my disclosure for more details! So the time has come, to morph my chocolate fudge cake into the very sort after chocolate fudge cupcakes. These are the most incredible cupcakes, so here they are. If you are after something delicious, but easier and more basic, then check out my chocolate cupcakes recipe! This sort of cake mixture is a lot thinner once you have made it, in comparison to a normal cake batter like a chocolate Victoria sponge. When I make it, I really just use my hand and a whisk and a spatula… there is no need for an electric mixer for these cupcakes as the batter is so easy to mix together. Melt the chocolate and butter, add in the dissolved coffee, whisk all the dry ingredients together, and whisk the eggs, vanilla and buttermilk together and you have a cake! I then use it up in another batch of cupcakes or use it in another recipe. The decoration of cupcakes like this is so easy, and I just adore something that is quick and easy to achieve. I went for adding my delicious chocolate fudge frosting to a large piping bag with my favourite piping tip, and swirled it onto the cupcakes. Find my other recipes on my Recipes Page! To be fair as well, lemon drizzle cupcakes has been one of the most highly requested bakes on my blog in a long time, and I was in a lemony mood. It basically morphs the two recipes together into a wonderful, light and refreshing bake. You can add poppyseeds into this bake if you want as well, but I just wanted something lemon through and through. I always think the sugar in a drizzle is important, and it also forms a lovely sugary crust on the cake which is delicious to bite into.

You can just colour the frosting yes! Did it with mixer and they taste great but mixture bubbled over lots in oven so I think it was over-beaten! Iman on October 24, at am. These will last for 3 days in an airtight container! Doreen on August 6, at pm. And I add the flour, eggs and vanilla in at the same time, as the recipe says. Would I need to alter the recipe? Hi Jane I absolutely love these cupcakes and are amazing I adjusted to g and 4 eggs for bigger size as I always found the last 2 would be smaller running out of batter. Once this is done, snip off the end and add the clingfilm to a piping bag with a piping tip. Do you think this would work? I use 12 Iced Jems baking cups on a flat tray! Oh my gosh! Chocolate Cupcakes.

Hi Jane, Would this be enough to make a 2 layer 6 inch cake please? The buttercream is amazing, I had some left over which I could have eaten by itself. What difference will using cater or vitamin sugar make? It just enhances the chocolate flavour and gives them a wonderful texture too! Thank you so much Jane — will try a different prosecco next time Once out of the oven, whisk together the lemon juice and caster sugar for the drizzle, and spoon evenly over the 12 cupcakes.
