Horsehead cake

A few weeks ago I made a very special cake, horsehead cake. I live in Holland so I see horses everyday. OK, now to the cake.

But a necessary evil if one is to be a cake-maker. Although licking the beaters does ease the pain. I like playing with making the decorations and getting the cakes look pretty. Frosting is… well, frosting — great at any age. Her daughter takes riding lessons on a horse named Monkey :.

I've recently updated the recipe card because while my old recipe was a good one, you can use any 9x13 inch chocolate cake to make a horse head. The diagram for carving the horse cake was originally from a pattern on Family Fun, but the link no longer works so I'll do my best to describe it for you below. You bake the the chocolate cake in a 9x13 inch pan. Let the cake cool, then freeze it so that it will be easy to carve. When the cake is frozen, set it in front of you with the 13 inch side on the bottom. Cut a triangle from the bottom about 4 inches from the left corner.

This horse cupcake cake is one of the easiest that I ever made! They were sooooo easy! See the other ones here and here. I used 24 cupcakes to make a horse shape for this pull apart cupcake cake. Using a medium-large star tip, I frosted each cupcake individually. Then I filled in the gaps between the cupcakes with more frosting. By the way, I like to make my own frosting. I can barely stand the kind they sell in the stores— have you ever looked at the ingredients?! Blend it all together and add in some coloring. The cream cheese really adds to the flavor, and makes the frosting so creamy and easy to decorate with.
