Start with a golden disc of pillowy, buttery rustic flatbread topped with fresh clams, fermented chilli, parsley and lemon. Or a seafood salad of mussels, shaved calamari and poached prawns with briny sea succulents and pale treviso leaves, finished with a house-made summer tomato vinegar. The kitchen sports a wood-fired oven, so meats and vegetables roasted over coals feature heavily. Think potatoes roasted with taleggio and sage. Inspired by the glamour of 20th-century Chicago, Gimlet at Cavendish House is the recent brainchild of acclaimed chef Andrew McConnell. Reposing in a large, brightly lit building in central Melbourne, the restaurant is hailed as a space for all seasons and reasons. The comfortable leather booths and exclusive high tables invite both large family lunches and intimate romantic evenings. An upstairs private dining room is also available to parties of up to 12, offering seating on the mezzanine overlooking the bustling restaurant. The wood-fired oven is the centrepiece of the open kitchen, spinning out classics such as dry-aged Muscovy duck breast with Corella pear and liquorice, and grass-fed tomahawk. A meal would be incomplete without a cocktail, many of which are Prohibition-inspired, or a glass of wine. There are over labels to chose from, all selected by head sommelier Anthony Pieri.
Melbourne, after all, has been listed as one of the most liveable cities in the world. Its interiors, reminiscent of the nostalgic glamor of old Chicago, quickly transport you to a realm of understated European charm. Throughout the venue, you hear the bustle of its patrons—guests old and new share laughter and rich conversations over their favorite Gimlet dish. The evening has just begun. A light, pillowy, fried dough served with aged Italian beef and Parmesan—it was the perfect appetizer to prepare us for the evening ahead. The San Jose saucisson paired with perfectly baked sourdough bread, butter, and Sicilian green olives remains one of my most talked about dishes of the evening. At Gimlet, the saying that good quality ingredients create the most delicious food rings ever so true. When it comes to sourcing ingredients, McConnell emphasizes how Gimlet works with as many local suppliers as possible and only uses produce that is in season.

The handsome, plush curved booths invite you to settle in and share a bottle of Champers with a friend, uniformed staff skate around the floor with ease, and warm light dances off the grand chandeliers overhead. Tonight, my friend and I are seated at the perimeter of the amphitheatre-like dining room, affording us generous views of both the sparkling hubbub of Russell Street at dusk and the swish centrepiece bar down the steps. Every dish that hovers by only serves to build that feeling of wistful anticipation, for while Gimlet is precious to look at and sit in , our senses are set firmly on the food.
