That would be a close fight but I'd give it to Dooku seven times out of ten. Maul briefly held his own against Sidious who is superior to both of them. While Dooku held his own against Yoda who is superior to both of them. Maul rivals Dooku in saber skills and is physically superior to the Count. Though DOoku is in better shape, is stronger, is faster, and more durable than most men his age there are numerous sources of this just ask and I'll explain. Even so, Maul's physical fitness would help him in such a fight and Maul wouldn't underestimate Dooku as much as the Jedi he struggled against Kenobi and Ahsoka. Maul is stronger than Kenobi throughout TCW.

Darth Maul and Count Dooku are some of the most iconic Sith from any Star Wars trilogy since both of them were hand-picked and trained by Palpatine himself. Having been trained to become Sith Lords, both Maul and Dooku sought to gain more power under Sidious while simultaneously looking to overthrow him. And while the comics made it clear who was more powerful than the other, a more detailed approach is needed to determine who has more potential as a Sith Lord. Despite both of them boasting enormous power in the dark side, Maul and Dooku pale in comparison to the dozens of Sith Lords in canon. Neither of them managed to overthrow Palpatine and claim their place on the top. They needed his knowledge of the dark side in order to grow stronger, but they also hated him for how he treated them. Given their very different upbringing, Maul and Dooku turned out to specialize in different areas of the dark side. In some respects, Palpatine purposefully held Maul back from learning many powerful dark side Force powers. While Maul was taken as a child by Palpatine, Dooku was seduced to the dark side as an adult. Palpatine trained Maul to be an assassin, but he chose Dooku to be a leader. When the path to the Jedi Council was blocked for Dooku, Palpatine offered him a position as leader of the Separatist Alliance. Nevertheless, Palpatine still did not teach Dooku enough for him to overthrow him. Maul was also adept in Force-assisted acrobatics, which complimented his duties as an assassin.

Same with TCW Ahsoka fight, it was stated multiple times Ahsoka did fought on Maul's level, they are both stated and shown as near pears to each other with Maul being a slightly superior.

Obviously, neither were the perfect choice for Palpatine, but one had to be better than the other. When The Phantom Menace was announced, fans were understandably thrilled by the prospect of new Star Wars films. However, the two have very different personalities. Maul is an aggressive, acrobatic warrior who charges his enemies, Dooku is much more laid-back and suave. Up to this point in Star Wars, the two Sith we had met were both humans. One was old and disfigured and one spent most of his time under a mask, but they were still human. Dooku looked like Christopher Lee, because, well, he was played by Christopher Lee. There are very few people cool enough to have major roles in Star Wars and Lord Of The Rings while in their 80s and fronting a heavy metal band on the side. The fight between Yoda and Dooku showed Dooku to be an impressive fighter capable of actions beyond his years, but it was hard to compete with the Maul vs Obi-Wan and Qui-Gonn fight from the end of The Phantom Menace.

Maul ultimately met his end on Tatooine at the hands of his nemesis thirty years after their first duel, but the fact he even got to that point is a testament to the depths Maul would go to stay alive, and ultimately the power of the Dark Side itself. On the other hand, Dooku took the wiser approach by sticking beside Palpatine, biding his time and waiting for the chance to seize the power from him. He had never come up against something that had completely overpowered him. I think a lot of fans even underrate Dooku's skill, I'd say he's second only to Yoda and perhaps Windu, its just his augmentation that fails him. This is noted in the AOTC novelization as well. Dooku doesn't even rely on the dark side as much as Sidious. Dooku's feats still seem better to me, so Dooku wins here too.
