Something of an in-between month, March signals that winter is on its way out, even if things don't feel entirely spring-like just yet. That's reflected in the month's produce; though delights like asparagus and wild garlic begin to pop up from the end of the month, it's a case of savouring the last of winter's bounty until then. Take leeks — March is our last chance to enjoy the fragrant, sweet alliums at their very British best. We'll be coating them in silky cheese sauce and topping with breadcrumbs for a super hearty gratin. This has seen her become the only female chef in Scotland to currently hold a Michelin star.

This page features every single restaurant included in the hallowed red book. After a shift to a virtual ceremony last year amidst all the coronavirus restrictions, this year Michelin decided to get rid of the ceremony all together and instead announced the new stars on their Twitter, in a move that we imagine might have ruffled the odd feather. This year saw twenty-five restaurants awarded new star ratings, including nineteen new one-star restaurants, five new two-star restaurants The Clove Club, Ikoyi , Liath, Chapter One by Mickael Viljanen and Ynyshir and one very well deserved! Closures and even a fire meant some restaurants disappeared from the list through no fault of their own. Chef Daniel Humm's commitment to plant-based cooking meant Davies and Brook at Claridge's shut its doors at the end of , as did The Crown at Burchetts Green, although it is reopening at a different location soon. Dublin mainstay L'Ecrivain also closed its doors this year after thirty-one years of service, as did Dom Robinson's The Blackbird.
