Lahmacun Pide is a thin piece of dough topped with minced meat, vegetables and herbs and spices, then baked. It is kind of like a delicious Turkish pizza with totally unique flavors spread over a delicious pillowy dough base. I start lahmacun pide by making a dough from water, yeast, sugar, salt, flour and vegetable oil. Then I make a meat and vegetable filling which I spread on top of the dough like a pizza. Bake in the oven and there you have it.

This is a wonderful pizza style dish inspired by the Turkish pide and lahmacun. A variation on this recipe would be to break an egg on to the top of the lamb mince a few minutes before it has finished cooking. Also, if lamb isn't your thing you would no doubt get some excellent results using minced beef, perhaps even minced turkey. You could use any basic bread or pizza dough for the base, mine is below. Don't forget that if you like this recipe you can find many more ideas on my blog. While the dough is rising, combine all the topping ingredients in a large bowl until evenly mixed. Cover and set to one side until needed. Once the dough has risen uncover it, knock it back and divide into your required number of portions. Each ball will serve people generously. Roll the dough out as thin as you can, 2mm is ideal, place on a baking sheet lined with parchment paper, brush with a little olive oil then leave to rise for another 15 mins.

While the dough and thin layer of topping are important to lahmacun, the toppings for Turkish pizza are just as important. What makes lahmacun a fun meal for a party, is that everyone can top it according to their tastes! Onion, tomato, lettuce, parsley, and lemon are all common garnishes to put atop Turkish pizza. The most common being the combination of fresh parsley, tomato slices, and a generous squeeze of lemon juice. The ideal crust is crispy, so it should crackle and give you a bit of an uneven roll.
